Merdouma , how to cook meat underground!

Merdouma or thikusht as the natives of Algeria call it : 


El merdouma. It is an Algerian traditional dish, specially served in the eastern states of Algeria, including: Khenchela, Batna and Souk Ahras. This plate consists of pieces of lamb or rabbit meat and even veal. Where it is seasoned and placed in a fire buried under the ground, and this for about two hours, where this period is sufficient to cook the meat well,
